Would you like to learn about Food Safety and Quality? Due to positive feedback, we are once again offering this course as an online (distance learning) programme.
Safety and professional knowledge in food handling are essential in all food production and service settings. This course is intended for anyone who works, or plans to work, in food processing and handling, such as in kitchens, restaurants, food service, or other roles involving food preparation.
The course is 60 hours in total and can be evaluated for up to 5 upper secondary school credits. It is taught according to the curriculum of the Education and Training Service Centre (Fræðslumiðstöð atvinnulífsins).

Course topics:

  • Food microbiology
  • Internal control, HACCP/GMP
  • Preparation of menus, product knowledge and food categories
  • Increasing healthiness of meals and prepared food
  • Shelf life, sensory assessment, product knowledge
  • Allergies and intolerances
  • Cleaning and disinfection

Assessment:
Attendance, assignments and active participation.

Time and location: 
The course runs from 21 September to 2 November 2026. 
Classes are held on Mondays and Thursdays from 17:00–19:00.

Participants attend online from their own location. Recordings will be available for later viewing; however, participants must submit reflections and assignments based on the session content.

Grants for course fees: 
Participants may apply for grants from trade union education funds to cover course fees.
